What do you do if another member is adding inaccurate information to a Travel Guide and is also wrongly editing your information including removing relevant photos?

I assume this is about the back and forth editing between you and Utrecht in the Leamington Spa article?
Utrecht is the main moderator for the guide. Most of his edits seem to be about "formatting"; trying to keep all articles in the guide to use a consistent structure, and the right types of headings. That's something where you can learn the ropes and take a close look at how it's done - take your cue from his edits.
If in the course of that he's introducing factual mistakes, then please fix them right up, and he should be totally fine with that.
The final back-and-forth I can imagine, is wrt how "notable" something is, and thus how much should be written about it. A short summary paragraph, versus going in depth about it in multiple paragraphs. That's probably the toughest one, and I can easily imagine this leading to (what is known at wikipedia as) "edit wars". That's a really tough one, for which talking about it in the forum really is the thing to do. Understanding each other's point of view should help with resolving this.
I also see he edited out a food festival photo you included (and took yourself), which I suspect in essence falls under the above point. In general the guidance is to only use "featured" photos, unless there are none available. Stylistically your photo doesn't really fit due to the included border. Personally I say that photo is a great illustration of the event, but the question is probably if that festival is important enough within the context of information about the town, that it needs/deserves such illustration.
That sounds like a hard question, where I don't know the answer. I'm also completely guessing and not at all certain that I'm interpreting Utrecht's thinking correctly here. But if it bothers you, maybe you can make your case why it should be included, and Utrecht can respond to that. (I can also imagine that a solution would be as easy as creating a copy of the photo without border.)
(I understand that collaboratively working on the guide is different from the very personal information provided at VT, so some patience and back-and-forth effort will probably be needed before this process works smoothly - and Utrecht has had a lot of extra work dumped into his lap, so might not always have the time to consider things as thoroughly as he might like. Thanks in advance for your understanding there!)
Finally - and I very much doubt it's necessary - but just in case: If the disagreement with editing was with another member, and couldn't be resolved in a mutually agreeable way, then Utrecht, as the moderator for the guide, would be the one decide what the solution would be. If you still really disagree, for what you think are good reasons, and talking about it isn't getting you anywhere either, then Peter is the final person to escalate to. In general he trusts us moderators to make the right decisions, and will back us up - but there's always the theoretical possibility that you're being treated unfairly, so he will give you a fair and open hearing.

I didn't intend to name anyone in public, I do find it strange however that things are removed without any explanation. I originally edited some things that were UK related to make them more local to Leamington. Where I have found something factually incorrect I left it and messaged Utrecht to make him aware, he has not replied but has since been into the Travel Guide to edit some of my text which no longer makes any sense and remove my photo. I just wondered what the rules were as I do not want to waste my time.

Sander already mentioned some rules regarding the guide and photos. Much of it is also explained in the guide rules (just visit the guide page and see the respectives explanation articles.
Also, feel free to edit flaws I made which are just not right. No problem at all and Thanks for the great contribution for sure.
Apart from only using features photos, don't use too many photos in general as the guide just looks a mess if there are too many.
No promotional links is another obvious one.
Not overly long paragraphs of minor things, or extremely long lists under 'cities'. Just some examples, but feel free to edit and we can work it out.
The template explanation is in the guide as well.
O, and again: please remove flaws I have made no problem again.

Have a look at the getting started page in the Travel Guide It does not say anything that suggests you cannot make entries but anyway, it will stop you if you try something not allowed. Go ahead but give the guide a good read first.
An important thing to note is that the guide is really not the same as the travel articles written on VT. Since it is collaborative and there only ever is ONE guide to a location, there necessarily are some guidelines and some stylistic guidelines. Most of it is covered in the articles linked from this page (also linked above by hasbeen).

You absolutely can create new entries, right from the start, and this is totally fine to do. During the creation step you'll be asked to apply a "template" to the article, to give it a fixed starting structure. It helps to look at other similar articles first to get an idea of how it all fits together.
The only limitation in the guide I'd expect you to possibly run into, is that some articles have been "featured", and those (I think), you need "Full Member" status for to edit.
In the case of serious abuse, moderators (and maybe also respected members and travel gurus?) also have the ability to "lock" articles, but I don't think any articles are currently locked.

If you want/need help with Gubbio ...?! You know 100 times more than I do about it, but I may have different insights and/or some useful photos
