I am planning to take a week of vacation either Oct. 11-20 or Nov. 8-17. I have already been to Amsterdam 3 times so I thought why not try Scandinavia. Is it realistic to have enough time to visit Denmark/Copenhagen, Sweden/Stockholm and Oslo/Norway in this amount of time? Also wondering about flying in/out of Copenhagen as well. Or should I fly into Oslo, trek to Stockholm then fly out of Copenhagen?

With only one week of time I would only choose one destination. Otherwise you'd wast a lot of time with checking in and out of Hotels and going from one destination to the next.
And the choosen time of the year really is not the best. It is cold, and rainy. For example in Oslo the average temperature during the day is only 8 degrees celsius and you have 11 days with rain there. To add, it is dark, sunrise the first week in November is about 8.00 h, sunset about 16.00 h. Times and temperatures are about the same in Copenhagen and Stockholm.

Absolutely. There is plenty to do in Copenhagen. But if you run out of things - the first time I was there, we went on a day trip to Kronborg to see Hamlet's castle, and at that time we could take a ferry from there over to Sweden
I think you could comfortably see Copenhagen and Stockholm in a week. Or Copenhagen and Oslo, though I'd tend to leave that for another trip and combine it with the fjords.
