I am planing a trip to New Orleans(leaving from Europe) and most flights proposed by airlines, have connections in Houston or Chicago, shorter than 2 hours.
Am I paranoid or is it really not enough time in US?

Yes it seems tight. Have you the option to do US immigration at the European end?

I've spent 2 hours trying to get through US Customs more than once so no, you're not being paranoid. 2 hours is very tight, especially when you consider that international arrivals have to collect their bags and re-check them for all onward US domestic flights.

As far as I'm aware only Dublin and Shannon airports offer US Pre-clearance (i.e. Border Control/Customs).

Assuming both flights are with the same carrier they'll have to sort you out if you miss your onward flight.

If you don't want to risk it..or don't want to risk a potentially long delay until a seat is available on a later flight if you are delayed at Customs ...you might explore flying to the US via one of those 2 Irish airports. It'll be a slghtly longer journey but it means on arrival you'll just walk straight through to US baggage reclaim.
