Although I have had a lot of experience eating, I have no experience in the areas you will be traveling in. I will add to karazyal's good advice only the following.

I have found that in most cases, it doesn't pay to try to find a quintessential place to eat. This is particularly true after covid when many restaurants have gone under because people were not going out to eat. But in most populated areas this will work.

We have occasionally been caught where there were no options to eat when on a road trip in a rural area, but even then eventually we found something.

If you want to try Emirati cuisine you will have to Google a restaurant. Traditional eateries don't exist anymore but recently the government has been subsidising Emirati restaurants in order to promote local culture. Whether the locals actually eat there or it is all for tourists is hard to say. My experience is a lot of people eat at the food courts in the mall and on the streets you see a lot of Bangladeshi, Indian or Pakistani eateries which are patronised by the migrant workers so if you are looking for so called working class food that would probably be it.

My one recommendation for Poland is you have to eat at least once at a Pierogarnia. Pierogis are pretty much a national dish and you can go fancy or cheap and Pierogarnias will almost always have delicious food.

In Taiwan for dinner you should try a night market. There are many of them around Taipei and there is always something tasty to eat at them. If you want to try a local favourite dish it would be beef noodle soup. Again many eateries sell it so you can try all the varieties.
