My wife and I are celebrating our 5th wedding anniversary .
We are looking to travel somewhere in the south east part of the US for 3-4 days in November.
We enjoy architecture, arts, nice views, and good food and are looking for recommendations for a city that would be good for this.
Any tips would be appreciated!

It's a bit more central, but New Orleans really has some impressive arts and MY GOODNESS, the food is incredible everywhere. The sculpture garden next to the New Orleans Museum of Art is one of my favorite places anywhere, and the architecture on some of the buildings is truly impressive, particularly in one stretch of mansions.
I also have a friend who spent time in Blue Ridge in northern Georgia. Every time I saw pictures, it looked like such breathtaking views. It's also an hourish away from Helen, which is a city designed to look like an old Bavarian town. It's like traveling to Europe without having to dig up your passport.

Driving or flying?
If driving, research how long it takes to get to "somewhere in the south east part of the US" for only 3-4 days in November.
Any interest in Southern Florida area?

Maybe Virginia this time. (Should be a little warmer than Canada.) 
Google type search will give you some suggestions. Colonial history, museums, military history, etc.

To be fair, different parts of Florida can feel QUITE unique from each other. 
This is more mid-Atlantic, but I just got back from a trip that included Baltimore, and it was a great time, especially if you like seafood. Right along the harbor with some really cool sights to check out. The library and nearby art museum (near the city's own Washington monument) are both free and beautiful.
If you're set on southeast only, I'd look at some of the small-midsize cities in North Carolina and Georgia, which will give a unique rural feel unlike New Orleans and Florida. Asheville would have been a really good one pre-Helene, although they'll likely need several months to recover now.
