I'm looking for a pair of all-purpose shoes. I don't want my feet to get water-logged in the rain. So gore-tex seems like a good option. However, I hear that gore-tex makes your feet sweat. Does anyone have some experience to share in this area?

Well I have few gore-tex shoes and if you don't walk ankle-deep water they will keep your feet dry..but they can make your feet sweat, or atleast they do that for me..But my feet do sweat easily if the temperature is ovet 10C-degrees 
I haven't notice any difference between lighter shoes and gore-tex in the "sweat-department" walking in warm-countries, only other alternative is flipflops (shoe that is generally open and let the air move), but they really are'nt comfortable walking long distances..

Where are you going to walk in your new shoes if you don't mind me asking? 
Where would I be walking in my carefully-chosen shoes? Everywhere. City streets and mountain trails. In any country that will allow me entrance. But I think I should begin in Europe first. Right now, I'm just collecting gear, which can be a tedious process. So many choices. So many videos and reviews.

Well then gore-tex should work as well as any other shoe, nothing can be perfect everywhere (flipflops being perfect in the beach, light walking shoes perfect while in the city, hikingboots good on long treks in the nature etc..

I am myself contemplating between goretex hiking boots and lighter walking boots, can seem to be making my mind which are ultimately better

A few things about flip flops and sandals that bothers me is bug bites, stepping in garbage or dog poop and banging my toe on something. I do bring flip flops for walking on hotel floors, where, even there, more than once I managed to smack into something. 
I bring a second pair of shoes with me when traveling overseas. I have big feet, so for some countries finding a replacement pair of shoes would not be cheap! And when my regular shoes get soaked I rely on that second pair of shoes until my good pair dries. (Back up pair of shoes are just a cheap pair of sneakers. )
A spare pair of cheap shoes might come in handy!

Stepping on something yucky is something I worry with sandals too..But I haven't yet banged my toe on anything, albeit I am in constant danger of tripping on my own feet...
I haven't yet solved how I would manage to get by longer with just two pairs..Couple of weeks maybe but we are planning longer trip and I still pack 3 pairs (one which I walk in and 2 in my bag..) even on a shorter trips...
