Introduction

Tabasco, officially Free and Sovereign State of Tabasco, is one of the 31 states which, with the Federal District, comprise the 32 Federal Entities of Mexico. It is divided in 17 municipalities and its capital city is Villahermosa. Tabasco is situated approximately half-way in between Cancun and Mexico City. Known as the "Eden of Mexico", it is a mostly flat state with lush tropical vegetation, wetlands, forests, and enormous rivers, namely the Grijalva and Usumacinta. Oil is plentiful along the shoreline and extensive operations are in place to exploit this natural resource. The inhabitants are called "Tabasqueño/as" in formal contexts, although they often refer to themselves as "choco/as". Tabasco is divided into five regions, known as Chontalpa, Centro, Sierra, Pantanos, and Rios.

Geography

It is located in the southeast of the country along the Gulf of Mexico bordering the states of Campeche, Chiapas and Veracruz, as well as the country of Guatemala.

The environment of the state consists of extensive low lying floodplains, mountains and valleys. Most of the territory is covered with tropical rainforest and wetlands. There are also areas with savanna, beaches and mangrove forests. Much of the rainforest has suffered degradation due to over logging and conversion of territory into farmland. The east is formed by low humid plains formed by sediment deposited by a number of rivers. In the Chontalpa zone and in parts of the municipalities of Cental and Jonuta, there are swampy depressions extremely vulnerable to flooding from both river flow and from excessive rainfall. In the south there are some elevations which are part of the central mesa of Chiapas. The most important of these is El Madrigal, La Campana, La Corona, Pomaná, Coconá, Mono Pelado and El Tortuguero. However, most hills in the state do not exceed thirty metres above sea level.

There are four principal ecosystems in the state: tropical rainforest, tropical savannah, beaches and wetlands. Tropical rainforest dominates most of the state due to the high levels of rainfall the area receives. However, what exists today is only a fraction of what used to be, as much of the forest area has been overexploited by man, mostly through logging and slash and burn agriculture. Most the intact rainforest are found in the municipalities of Tenosique, Balancán, Macuspana, Teapa, Tacotalpa, Cárdenas and Huimanguillo. These rainforests contain species such as mahogany, cedar, various types of palms, “macayo,” ceiba, willows and many more. There are various types of orchids native to the state along with a native species of cactus. This environment also has the widest variety of wildlife, such as macaws, parrots, quetzals, hummingbirds, iguanas, and various kinds of snakes. Mammal species have declined because of deforestation, but still include spider monkeys, jaguars, pumas, raccoons, anteaters, deer, and wild boar.

Sights and Activities

Tourism in the state is organized into various routes. The Centro or Villahermosa Route is centered on the state capital with its museums and historic buildings. These include the Cultural Center of Villahermosa, Regional Anthropology Museum, Tomás Garrido Canabal Park, the Yumka’ Ecological Reserve, The Paseo Tabasco Malecon Tourist Corridor, the Papagayo Interactive Museum and the Tabasco Cathedral.

  • The Cacao Route consists of various cacao haciendas, where guides give lessons on how the plant is cultivated and the cacao bean is harvested, then processed into chocolate. It also includes a visit to the Comalcalco archeological site. The Cacao Route focuses on the municipalities of Nacajuca, Jalpa de Méndez, Comalcalco and Paraíso. In Nacajuca, located on the river of the same name, the main attractions are its boardwalk area, handcrafts and surrounding Chontal villages such as Tucta, Mazateupa, Oxiacaque, Tecoluta and Guatacalca, where many customs and the Chontal language are preserved. In Jalpa de Méndez, the main attractions are its gourd handcrafts, the San Remo cigar factory, the La Encantada Turtle Farm and the Pomposú Juliva Wetlands on the Mezcalapa River. In Comalcalco, attractions include the Comalcalco archeological site, cacao haciendas such as La Luz with its Cacao Museum, Jesús María, La Chonita and Cholula. Paraíso is a small port with beaches and some resort facilities.
  • The River Route is based in the interior portion of the state, between the Grijalva and Usumacinta Rivers. This is an ecotourism route with activities such as canopy climbing, rafting and rappelling. There is also an option to visit the Ponomá archeological site. The River Route is on the interior portion of the state. It includes the Cascadas de Reforma Ecological Reserve, the Reforma Mayan archeological site, the Dr. José Gómez Pánaco Museum, the El Popalillo Lake and the Ribera de Acallán lookout point.
  • The Wetlands Route emphasizes flora and fauna both on land and on the water. The main attraction is the Centla Biosphere Reserve. The reserve is home to a wide variety of wildlife species such as herons, storks, ibis, crocodiles, fresh water turtles, manatees and more. There is also over 500 species of plants with some of the most important concentration of aquatic plants in Mesoamerica. Other attractions include the Centla maritime port, the Museum of Navigation, the town of Frontera (where the Spanish founded the first European settlement on mainland America) and the Punta Manglar Ecotourism facility. Beaches in the area include Pico de Oro, Playa Azul, Miramar and El Bosque.
  • The Mountain Adventure Route is in the highlands of the state with its forests, sulphurate waters and caves, centered on the town of Tapijulapa, which is noted for its handcrafts of wood and wicker. It features the hills, rainforest, sulfur springs and caves in the Teapa, Tacotalpa and Macuspana municipalities. Sites include he Río Puyacateno Park, Los Azufres Hacienda and Spa, the José Natividad Correa Tosca Museum and Coconá Caverns. Ecotourism activities include spelunking, rappelling and hiking.
  • The Olmec Zoque Route encompasses the municipalities of Cardenas and Huimanguillo. Cardenas is near the ocean with various attractions. One is the fishing village of Villa Sánchez Magallenes. Huimanguillo has archeological sites and a number of natural attractions. The best known is La Venta, an Olmec site but another important one is Malpasito, which belongs to the Zoque culture. In addition, there are areas of tropical rainforest, waterfalls, petroglyphs and lakes.
  • The Biji Yokot’an Route centers on the municipality of Nacajuca. It features the crafts of the area such as decorated containers made from gourds, its cuisine, especially river fish, the Chontal people of the area and the river boardwalk.

Other Sights and Activities

  • La Chonita is a 200-year old former hacienda which is still a working cacao and sugar cane farm along with some tourist services. It is located in the Mexican state of Tabasco and part of the Cacao Route that the state promotes. While it is much smaller than it was before the Mexican Revolution, it still produces cacao and sugar cane along with organic earthworms for composting. The former main house for the hacienda is now a youth hostel and dormitory for students and the site provides a number of other tourism services. The hacienda extends over thirty hectares located in the municipality of Cunduacán in the Chontalpa region of Tabasco. It is part of the Cacao Route along with various other chocolate haciendas such as La Luz and Jesús María and the Comalcalco (archaeological site) archeological site. Today it is the property of Benito and Alfonso Fernández, who have preserved the house almost completely intact. The main room of the house contains photography done by former owner Santiago Cruces, as well as preserved specimens of a serpent locally called mazacoatl. The front yard has a small deep well, an old sugar mill and an area dedicated to the raising of earthworms. The hacienda grows cacao and sugar cane. Another important industry is the raising of organic earthworms for composting. In a closed section in the back of the property, iguanas, alligators and Central American river turtles are allowed to reproduce each year.
  • Pantanos de Centla is a tropical moist forest ecoregion in southern Mexico, which includes seasonally flooded forests and wetlands, in the summer. The ecoregion covers an area of 17,200 square kilometers in the states of Tabasco and Campeche. The Pantanos de Centla occupy the delta of the Usumacinta and Grijalva rivers, which empty into the Gulf of Mexico and the Laguna de Términos through numerous distributaries. The ecoregion includes year-round wetlands, and freshwater swamp forests which are inundated during the summer rainy season. The Usumacinta mangroves lie in the brackish-water zone between the Pantanos de Centla and the open water of the Laguna de Términos and the Gulf. The Petén-Veracruz moist forests lie to the west and south, and the Yucatan moist forests lie to the east.
  • La Venta is a pre-Columbian archaeological site of the Olmec civilization located in the present-day Mexican state of Tabasco. Some of the artifacts have been moved to the museum "Parque - Museo de La Venta", which is in nearby Villahermosa, the capital of Tabasco. La Venta was a civic and ceremonial center. While it may have included as-yet-undiscovered regal residences, habitation for the non-regal elite and the commoners were located at outlying sites such as San Andrés. Instead of dwellings, La Venta is dominated by a restricted sacred area (Complex A), the Great Pyramid (Complex C), and the large plaza to their south. As a ceremonial center, La Venta contains an elaborate series of buried offerings and tombs, as well as monumental sculptures. These stone monuments, stelae, and "altars" were carefully distributed amongst the mounds and platforms. The mounds and platforms were built largely from local sands and clays. It is assumed that many of these platforms were once topped with wooden structures, which have long since disappeared.
  • San Antonio de Padua Temple is located in the town of Nacajuca. The current construction dates to 1965 in mostly Gothic style. The main facade has three levels with a triangular crest. The facade is flanked by two towers with four levels and a spire decorated with doves, which support a metallic cross. The facade has pointed arches with three entrances, windows on the second level of the portal and the third and fourth levels of the towers. The third level of the portal has a rose window as well as the second level of the towers. Another is found on the north tower which the south tower has a clock. The interior has a basilica layout with the central nave higher than the side ones. This permits illumination from the windows in the center as well as the side windows.
  • San Francisco de Asís Church is located in the city of Jalpa de Mendez. It was restored recently. The church’s facade is Neoclassical made of sandstone flanked by two bell towers. The interior is single nave with two main sections and a cupola in the center of the roof. One of the decorative features of the church is five doves in different colors, which symbolize five continents. In front of the church is a wide atrium with benches, lights and garden areas along with fountain which used to be a baptismal font.
  • Coronel Gregorio Méndez Magaña House Museum I also located in the city of Jalpa de Mendez and is the former residence of the leader of Tabasco forces that defeated the French at the Battle of Jahuactal. The house is constructed of brick with a wood roof. Although the structure has been reconstructed several times, it still maintains its original look. In 1984, the building was reopened as a museum with six halls where items such as arms, drawings, photographs, oil paintings, historical documents and the coronel’s personal belongings are displayed.
  • Don Remo Tobacco Farm and Cigar Factory was established in 1995 in the town of Tierra Adentro. The name is in honor of Remo Loaiza San Vicente who was an important tobacco farmer and father of the current owner of the factory, Alfonso Loaiza Garcia. The current enterprise began with Sumatra tobacco and by 1997 it was cultivating fifty hectares, with a yield of about 1.5 tons per hectares. The factory covers an area of 550m2 to cure the leaves and produce the cigars. While this enterprise is relatively new, the growing of tobacco here dates back to the Mayans. However, the production of tobacco here has been declining due to the difficulty in obtaining supplies, poor crop yield and a declining local market. There have been recent efforts to support tobacco production in the state as part of its culture along with its cuisine.
  • Comalcalco is an ancient Mayan archaeological site in the State of Tabasco, Mexico, adjacent to the modern city of Comalcalco and near the southern coast of the Gulf of Mexico. It is the only major Maya city built with bricks rather than limestone masonry and was the westernmost city of the Mayan civilisation. Covering an area of 7 km2, Comalcalco was founded in the Late Classic period and may have been a satellite or colony of Palenque based on architectural similarities between the two. The city was a center of the Chontal Maya people. Located in the Chontalpa region on an extensive alluvial plain once covered by low evergreen rainforest interspersed with mangrove swamps, Comalcalco lies2 km west of the modern city of Comalcalco on a small rise surrounded by lowlands. It is 51 km from the city of Villahermosa, and approximately 100 mi north of Palenque. Before modern times the important Mezcalapa River flowed 900 m east of the main buildings in the site. The most unusual feature of the ancient city is its use of fired clay bricks for construction as opposed to the quarried limestone common in the vast majority of Classical Maya sites. The bricks are of irregular sizes and seem to have been made by cutting longer sections of clay rather than with moulds. Many have designs and inscriptions painted, printed or etched into them. The bricks were joined by mortar made of calcinated seashells and oysters possibly gathered at the nearby Mecoacan Lagoon.
  • Tortuguero (or El Tortuguero) is an archaeological site in southernmost Tabasco, Mexico which supported a Maya city during the Classic period. The site is noteworthy for its use of the B'aakal emblem glyph also found as the primary title at Palenque. The site has been heavily damaged by looting and modern development; in the 1960s, a cement factory was built directly on top of the site. Little is known about the dynastic lineage of this site, aside from Bahlam Ajaw, who ruled from 644-679 CE. In 649 CE he conquered Comalcalco, one of the westernmost sites in the Maya world.
  • Pomona is a Maya archaeological in the municipality of Tenosique, about 50 km east of Palenque Ruins. Its flowering was in the Late Classic period. Pomona is a dispersed settlement built in a fertile, hilly region and belonging to the Usumacinta river sites. It was discovered in 1959 and has been investigated, albeit only very partially, between 1986 and 1988. It consists of a total of six archaeological complexes, only the northernmost one of which, a quadrangular plaza with 13 buildings, has been explored. There are texts at Pomona referring to dates as early as 297 CE, but little more is known from this time period. In 659 CE, Palenque captured six lords in battle. One was said to be from Pipa', a location associated with the site of Pomona.

Events and Festivals

Most of the fiestas of the state of Tabasco are related to the anniversaries of the foundation of municipalities, the celebration of local Roman Catholic patron saints or exhibitions of the most popular produce of the particular region. The majority are observed at the local level and, given that the greater part of the municipalities have few inhabitants, the festivals can be a bit austere.

Patron saint days are still popular events in the state, with some of the more notable being San Isidro in Comalcalco and Nacajuca, James the Greater in Chontalpa, Our Lady of the Remedies in Nacajuca, Our Lady of the Assumption in Cupilco, Francis of Asissi in Tamulté de las Sabanas, events related with Lent in Atasta and Tamulté and the Saint Sebastian in Tenosique. There are also notable Carnival celebrations in Pochó, Tenosique and Villahermosa.

Day of the Dead

Although the Day of the Dead is also celebrated in many Latin American countries (and also in parts of Europe, Asia and Africa), the Day of the Dead (Spanish: Día de los Muertos) is most intensily celebrated in Mexico where it is equal to a National Holiday. The holiday focuses on gatherings of family and friends to pray for and remember friends and family members who have died. The celebration takes place on November 1st and 2nd, in connection with the Catholic holidays of All Saints' Day (November 1) and All Souls' Day (November 2). Traditions connected with the holiday include building private altars honoring the deceased using sugar skulls, marigolds, and the favorite foods and beverages of the departed and visiting graves with these as gifts. Although it is about the Dead, it is also a celebration where eating and partying both are common as well.

Other Events and Festivals

  • Grito de la Independencia - September 15th is Mexican Independence Day! A massive celebration involving plenty of singing, dancing and fireworks takes place in the Zócalo. Everyone here awaits an appearance from Mexico's president who rings a bell from a central balcony of the Palacio Nacional overlooking the Zócalo. The president then shouts out the Grito de Dolores, or the Cry of Dolores which was Father Hidalgo's famous call to arms against Spanish rule in 1810.
  • Dia de la Candelaria. Candlemas is held February 2nd and commemorates Jesus being introduced into the temple 40 days after his birth. This nationwide celebration sees many different ways of celebrating and many towns in Tabasco State hold processions, bullfights and dances. Of course, plenty of delicious, traditional foods are served during Dia de la Candelaria as well.
  • Carnaval is held in late February or early March throughout Tabasco State and all of Mexico. This big party is meant to celebrate the 40 day penance of Lent. Carnaval always takes place during the week or so prior to Ash Wednesday, 46 days before Easter Sunday. Mexicans celebrate this holiday with fireworks, food, dancing, parades, dancing and drinking.
  • Semana Santa, or Holy Week, is a huge celebration which starts on Palm Sunday. This is a very popular time for Mexicans to take a short break; as a result, it seems most of the country is on the move, with buses and hotels often booked out. As for the celebration of Semana Santa, expect colorful processions and many masses at churches everywhere.
  • Día de Nuestra Seňora de Guadalupe, or Day of our Lady of Guadalupe, is held December 12th. There is a week-long build up to this religious celebration in honour of the Virgin who appeared to the indigenous Juan Diego in the year 1531. Since then, the Lady of Guadalupe has been Mexico's religious patron and her veneration is very significant. It is traditional for young boys to be dressed as a Juan Diego and for young girls to be dressed in indigenous garb and brought to a special mass, held at many churches throughout the country.
  • New Year's Eve. Mexicans celebrate New Year's Eve or locally known as Año Nuevo, by downing a grape with each of the twelve chimes of the bell during the midnight countdown, while making a wish with each one. Mexican families decorate homes and parties, during New Year's, with colors such as red, to encourage an overall improvement of lifestyle and love, yellow to encourage blessings of improved employment conditions, green to improve financial circumstances and white to improved health. Mexican sweet bread is baked with a coin or charm hidden in the dough. When the bread is served, the recipient whose slice contains the coin or charm is believed to be blessed with good luck in the new year. One can expect a lot of firecrackers, fireworks and sparklers being fired. At midnight there is a lot of noise and everyone shouts: "Feliz año nuevo!" People embrace, make noise, set off firecrackers, and sing Auld Lang Syne.
  • Cinco de Mayo is an annual celebration held on May 5. The date is observed to commemorate the Mexican Army's victory over the French Empire at the Battle of Puebla, on May 5, 1862, under the leadership of General Ignacio Zaragoza. The victory of the smaller Mexican force against a larger French force was a boost to morale for the Mexicans. A year after the battle, a larger French force defeated Zaragoza at the Second Battle of Puebla, and Mexico City soon fell to the invaders.

Weather

Tabasco has a hot tropical climate, with the Gulf of Mexico having significant influence on weather patterns. Over 95% of the state's territory has a hot, wet climate. The rest is hot and semi-humid, located in the far northeast of the state. The average annual temperature is 27 °C with high temperatures averaging 36 °C , mostly in May, and lows of 18.5 °C in January. Unlike many parts of Mexico, Tabasco has abundant year round precipitation. The state receives an average annual rainfall of 2,550 millimetres. Rain occurs all year but is particularly heavy from June to October. The flat areas of the state are subject to frequent flooding. One reason for this is the rivers that flow from the Sierra region and the Usuamacinta River. Another is that there are a number of dams such as the Angostura, Chicoasén, Malpas and Peñitas; these are built for hydroelectricity and flood control, but can overflow.

Carlos Rovirosa Pérez International Airport or Villahermosa International Airport (IATA: VSA, ICAO: MMVA) is an international airport serving Villahermosa, the capital of the Mexican state of Tabasco. It is also the nearest major airport to the Maya ruins of Palenque, a popular tourist destination.

By Bus

Buses of all classes enter into Tabasco from neighboring states and beyond. First and second class buses serve the routes from further afield, while simpler buses move about the state on lesser roads serving the smaller villages and ejidos.

Getting Around

By Bus

Every city and town in Tabasco has bus service from points within the state and beyond. First and second class buses traverse every major road and almost all secondary roads. Local bus service (often aboard old school buses) pick up the slack and serve even the smallest village. Buses are frequent and reservations are not needed; just show up at the bus station and purchase your onward ticket or, especially in smaller villages, simply flag the bus down en route. The holidays of Christmas and especially Easter see much of Mexico on the move - consider planning your bus travel ahead of time during these holidays.

Eat

The cuisine is based on the foods of the ancient Mayas and Chontals, using plants and animals native to the region such as achiote, chili peppers, chipilin and banana leaves, with corn and beans serving as the base. (amashito) Traditionally, people in Tabasco eat seven times a day, these meals are called "puntal" (after getting out of bed), breakfast, "refigerio," "apertivo," "comida," "merienda" and "cena." This regime is based on rural work customs which required starting the day before the sun rose. Typical dishes include those with iguana meat, Lepisosteus fish, beef puchero, smoked oysters, totopostes, pork with beans and tortillas made with banana and fresh corn. Chocolate is still found in preparations which have not changed since pre Hispanic times mostly as hot and cold beverages. The most common cold chocolate beverage is pozol, served fresh or fermented. Each of the regions has certain specialties. Teapa is known for its cheese and longaniza sausage. Jalpa de Méndez produces head cheese, longaniza sausage and another cured meat called butifarra. Macuspana's dishes are often based on ingredients from the area's rivers such as bass, turtle and Lepisosteus. Paraíso is known for its oysters, often cooked in their shell over an open flame. Jalapa is known for its sweets such as sweetened fruits in corn husks, often accompanied by a cacao and corn beverage called chorote.

  • Tacos are by far the most prevalent food in Mexico and come in many varieties and regional variances. Here, tacos are more often served on corn tortillas instead of wheat. Flour tortillas are the norm in the northern states of Mexico. Beef is also the meat of choice for tacos here,
  • Mollete is an open faced sandwich consisting of a bolillo roll smothered in refried beans and melted cheese.
  • Carnitas are slow braised meats usually bought by weight. These often come with tortillas to wrap the meat in. Any meats cooked in this fashion are always tender and very rich in flavor.
  • Cabuche is the flower from the biznaga cactus. this edible flower is a delicacy in San Luis Potosi state. There are many dishes this flower can go into and many ways to prepare it on it's own.
  • Chiles en Nogada - this dish is meant to represent the Mexican flag's 3 colors; red, white and green. The red portion of this dish is a garnish of pomegranate seeds, the white from a cream sauce and the green from poblano chili pepper.
  • Huitlacoche is a fungus that grows on organic corn ears due to the lack of anti fungal chemicals introduced to the crop. When cooked and added to certain dishes huitlacoche is very earthy in flavor.
  • Pozole - Choose either red or green pozole. This corn and chile based soup is very tasty and is served at many comedors and loncherias in marketplaces throughout Mexico.
  • Rosti-Pollo - Roast chicken is a hugely popular meal in Mexico and represents an astounding value for travelers on a budget. Order a whole, or half chicken. Each order comes with french fries, unlimited tortillas and salsa.
  • Birria Stew - Birria is typically goat meat but many establishments prepare it with beef. The broth is a tomato and chili based one although it is not too spicy. Fresh diced onions and cilantro always accompany birria stew as a garnish. Of course, unlimited corn tortillas are served with each bowl.

Drink

Beer

Mass produced Mexican beers tend to be a bit less sweet than their American counterparts. All in all, Mexican beers are quite good and go very well with Mexican food. Microbrews are starting to pop up in big cities and certain varieties are distributed further afield. Many bars catering to a hip clientele will feature imported beers from throughout the world

Montejo, Leon, Victoria, Superior, Carta Blanca and Estrella are national brands that can be difficult to find at times depending on where you are in Mexico. Lately, both Tecate and Indio brands have become the most widely distributed beers next to Corona. Many of the beers mentioned are brewed by Mexico's brewery powerhouses - Modelo and Cuauhtemoc.

One of the traditions in Mexico is to add lime to beer, adding a pleasant acidity. Another popular way to drink beer in Mexico is to mix it with lime, tomato juice, spices and assorted chili-based sauces. This drink is known as a Michelada and is very popular in hotter climates throughout Mexico and actually makes for a very refreshing concoction.

Tequila

Tequila is the signature firewater of Mexico and nearly all of it hails from the state of Jalisco. Here, small agave plantations and larger haciendas churn out a staggering number of brands. Of those brands, there 5 varieties of tequila:

  • Oro, or gold is possibly the poorest quality of the lot. That gold color this variety is known for is artificial and this tequila really burns the throat. It is best used in cocktails and margaritas.
  • Plata is also known as Blanco and represents the next lowest quality of the 5 varieties but tastes better than the Oro variety. This is unaged and the flavor is much less complex, making it suitable as a mixer rather than a shot for sipping.
  • Resapado means rested and this variety is aged for up to 9 months. Flavor profiles become more complex and respado makes for a good introductory sipping variety. Expect a clean, sharp taste with a subtle peppery finish.
  • Aňejo. This aged variety, conditioned in oak barrels for up to 1 year, is very smooth and sweet. Many people enjoy this variety as an aperitif, or even an after dinner drink. Certain brands of aňejo represent a very good value, especially considering the amount of nuanced flavors created by each distilleries' aging techniques.
  • Extra Aňejo, or vintage, is a relatively new variety. This is aged for 3 years, often using other types of barrels aside from the traditional oak ones. This is best sipped neat. Extra Aňejo has boosted the craft tequila market in Mexico.

Mezcal

  • Mezcal can sometimes be as high as 60% alcohol, so enjoy this drink with caution! Mezcal is made from 1 of around 20 different species of agave, some of which can take decades to mature. Only once will a mature agave sprout the flower whose sap is fermented to make this potent potion. Some varieties include:
  • Minero is distilled in clay pots and is a very high quality variety. Subtly smoky in flavor and very smooth.
  • Arroqueňo tends to be a subtly sweet-tasting Mezcal. Many find this to be the most pleasant variety. The flavor begins a bit bitter but quickly finishes sweet and warm.
  • Joven means young, and this variety is simply unaged and therefore a little bit rough.
  • Tobalá is named for an actual variety of agave plant, grown in mountainous regions.

Pulque

Pulque has been enjoyed since well before the Spanish conquest of Mexico but has enjoyed a resurgence in the last decade, especially among the hip crowd. Pulque is simply the fermented sap of the maguey plant. The end result is a very thick, cloudy drink with a slightly acidic taste. This viscous liquid is often given artificial fruit flavoring to improve it's overall uninspiring taste, however many pulque drinkers are purists when it comes to quaffing this strange alcoholic beverage. In Mexico, pulquerias - bars exclusively serving pulque - offer a real authentic drinking experience and many feature roving musicians ready to play a tune for the merry patrons. Pulque has an alcoholic content between 4% and 6%.

Other Drinks

  • Chamoyada is a sweet and spicy type of shaved ice, or raspado or Mango sorbet, prepared with chamoy. It is a part of Mexican cuisine, and is also common in regions of the United States with significant Mexican-American populations. The drink is usually sweetened with mangoes or apricots. It is essentially a combination of chamoy sauce, shaved ice, chili powder, and fruit chunks. In certain variations, a whole fruit popsicle, or paleta, is added to the drink and mixed with the shaved ice. The drinking straws served with chamoyadas also often have tamarind candy on the outside. Chamoyadas do not contain any dairy products. The different flavors of chamoyadas can include fruits like mango, lemon, guava, tamarind, pineapple and strawberry.
  • Champuraddo is a warm and thick chocolate-based drink, prepared with either masa de maíz (lime-treated-corn dough), masa harina (a dried version of this dough), or corn flour (simply very finely ground dried corn, especially local varieties grown for atole); piloncillo; water or milk; and occasionally containing cinnamon, anise seed, or vanilla. Ground nuts, orange zest, and egg can also be employed to thicken and enrich the drink. Atole drinks are whipped up using a wooden whisk called a molinillo (or a blender). The whisk is rolled between the palms of the hands, then moved back and forth in the mixture until it is aerated and frothy.
  • Liquados are a Latin American handmade blended beverage similar to smoothies, made with milk, fruit, and usually ice.They are also sometimes called "preparados" (meaning "prepared"). Licuados and other fresh fruit juice drinks are ubiquitous throughout Mexico. They are sold by street vendors, and in special licuado shops, restaurants, and fruterias (restaurants specializing in fresh fruit).
  • Aguas Frescas, (Spanish for "cool waters", or literally "fresh waters") are light non-alcoholic beverages made from one or more fruits, cereals, flowers, or seeds blended with sugar and water. Some of the more common flavors include tamarind, hibiscus, and horchata. Aguas frescas are sold by street vendors, but can also be found in bodegas (convenience stores), restaurants and juice bars.
  • Atole, also known as atol and atol de elote, is a traditional hot corn and masa-based beverage of Mesoamerican origin. Chocolate atole is known as champurrado or atole. It typically accompanies tamales, and is very popular during the Christmas holiday season (las Posadas).
  • Café de olla is a traditional Mexican coffee beverage. To prepare café de olla, it is essential to use a traditional earthen clay pot, as this gives a special flavor to the coffee. This type of coffee is principally consumed in cold climates and in rural areas. In Mexico, café de olla is made with ground coffee, cinnamon, and piloncillo (known as panela in other countries).
  • Jarritos is a popular brand of soft drink in Mexico, founded in 1950. Jarritos is made in fruit flavors and is less carbonated than popular soft drinks made in the United States or Canada. Many Jarritos varieties are naturally flavored. The word jarrito means "little jug" in Spanish and refers to the Mexican tradition of drinking water and other drinks in clay pottery jugs. Produced in Mexico, they are sold throughout the Americas.

As is typical with all of Mexico, accommodation options in Tabasco run from budget hotels and hostels to fancier lodges and resorts. Every city and town caters to the traveler as many people traverse the country by bus and often find themselves staying overnight along the way, especially on long-haul routes. Because of this, many hotels can be found around bus stations and in small towns those accommodation options will extend well beyond the transportation terminal. You will find an accommodation type to suit any budget in Tabasco.

Many hotels in Mexico (and Tabasco) list their prices at the front desk and haggling for a reduced rate for a stay of a few days or more is acceptable. Many hostels have become more expensive than hotels, especially for a couple traveling together. It is very common to find clean, safe, comfortable and centrally located hotels for 200 pesos. Wi Fi is almost always available at these hotels and sometimes cable television and air conditioning are included. Prices for these same types of hotels are at least double on the Baja Peninsula. It is also acceptable to ask to see a room before paying. Ask to see another room if the one shown to you doesn't suit you. Street noise is a problem in Mexico (and Tabasco is no exception); rooms facing the road can be very loud. Ask for an internal-facing room if possible. Hot water is often an issue in Mexico and may only be available during certain hours.
